RECIPE OF THE MONTH
SOUTH AFRICAN YELLOW RICE
This is a time-honoured South African recipe, which comes from the great culinary tradition of the Cape Malays way back in the 17th century. It’s easy to make, and is deliciously paired with meats like venison, corned beef, traditional Bobotie or really, any preferred meat and gravy.
INGREDIENTS:
DIRECTIONS:
In a saucepan, combine the rice, salt, curry powder, sugar, cinnamon, raisins, butter and water. Bring to a boil uncovered. When it comes to a boil, reduce the heat to low, cover and let it simmer for 20 to 30 minutes, or until rice is fluffy and water has been absorbed. Remove from the heat and fluff with a fork. Keep warm until serving time.

Students all across Ontario will be heading back to school towards the end of August.
The government’s plan to reopen a number of schools was approved by public health officials given the decline in COVID-19 cases over the summer. This is a good thing according to pediatric specialists, who say that while the virus is dangerous, not going to school is dangerous, too – for educational purposes, as well as for children’s mental health reasons.

RECIPE OF THE MONTH = GOURMET BOERIE ROLLS
INGREDIENTS:
- 15ml (1 Tbsp) cooking oil
- 500g Boerewors
- 2 medium onions
- 2 medium tomatoes, coarsely chopped
- 125ml (½ cup) Spur Grill Basting Sauce or Spur Peri-Peri Sauce
- Soft butter or margarine
- 6 hotdog rolls
COOKING INSTRUCTIONS:
- Heat oil in pan and fry the Boerewors until golden brown. Set aside and drain excess oil.
- Add onions to pan and sauté until soft. Add tomatoes and simmer until tomatoes soften.
- . Cut rolls and spread butter inside, add boerewors and top with sauce. Drizzle with Spur Salad & French Fry Dressing.

FATHER’S DAY DINNER – SOUTH AFRICAN STYLE!

RECIPE OF THE MONTH – GOURMET BOEREWORS ROLLS
INGREDIENTS:
15 ml (1 Tbsp) cooking oil
500 g boerewors
2 medium onions
2 medium tomatoes, coarsely chopped
125 ml (½ cup) Spur Grill Basting or Spur Peri-Peri Sauce
Soft butter or margarine
6 hotdog rolls
METHOD:
Heat oil in pan and fry boerewors until golden brown. Set aside and drain excess oil.
Add onions to pan and sauté until soft. Add tomatoes and Spur Grill Basting and simmer until tomatoes soften.
Cut rolls and spread butter inside, add boerewors and top with sauce. Drizzle with Spur Salad & French Fry or Sweet Chilli Dressing, if preferred.
TIP! The boerewors can be substituted with vegetarian sausages.

VICTORIA DAY IN CANADA; MEMORIAL DAY IN THE UNITED STATES
Victoria Day in Canada is Monday, May 24th and Memorial Day in the US is one week later on Monday, May 30th.
Many North Americans celebrate their respective long weekends with barbecues and family get-togethers; but, these holidays are so much more than a chance to kick off the summer months. At its heart, both of these holidays are days to solemnly honor all of the men and women who have died in military service.
The main purpose of Victoria Day and Memorial Day is to pay tribute and memorialize the veterans who made the ultimate sacrifice for their country.
From all of us here at Eat Sum More, we salute the men and women who lost their lives while serving in the military.
MAY IS NATIONAL BBQ AND SALAD MONTH
The sun is shining, the breeze is warming, the birds are chirping, and grills all around Toronto are being lit up for the first barbecue of the season. And there is no better way to spend a beautiful Sunday afternoon in May than by throwing a barbecue for your friends and family to enjoy!
Yup, it’s time to take the covers off your grills and smokers and start cooking outside again.
Eat Sum More’s fine selection of grillable meats – ROAST CHICKENS, FLAT CHICKENS, BEEF BOEREWORS, CHICKEN BOEREWORS & BREAKFAST SAUSAGE BOEREWORS – are lovingly made from our family recipe which has been passed down for generations.
The select spices we use are directly related to the spice route that made its way around the Cape of Africa. My late father, Louis Slimowitz, had a number of butcheries in Klerksdorp and Stillfontein, and he always used to say again and again, “It’s all in the spices!”
We have worked hard and with relentless passion and integrity to raise the bar as we continue to provide you, our clients, with the freshest, sustainable, top-of-the-line, hand cut, traditional South African meat products that you’ve come to love over the years.
NOTE – We do not ship frozen meats; in-store pick-up only.
RECIPE OF THE MONTH – BLACK FOREST CAKE FOR MOM
DARK CHOCOLATE SHARDS:
90g dark chocolate
2 rectangles of baking paper 40 cm x 30 cm
1 cardboard core from an empty roll of kitchen paper or foil
CAKE BATTER:
400g tin pitted black cherries
3 extra large eggs, at room temperature
1 cup (250ml) canola oil
1 cup (250ml) of liquid made up of juice drained from cherries and strong black coffee
1 x 650g Ina Paarman’s Chocolate Cake Mix
FILLING AND TOPPING:
2 cups (500ml) fresh cream
4 tbsp (60ml) dry Ina Paarman’s Lemon Flavour Cheesecake Mix
Cherries, fresh if available or use bottled stemmed cherries
Dark chocolate shards (see above)
DIRECTIONS – DARK CHOCOLATE SHARDS:
Gently melt the chocolate in a small bowl over hot water. Spread the chocolate on one sheet of baking paper leaving a wide border. Lay the second sheet on top. Use a rolling pin to gently level the chocolate between the sheets of baking paper. Don’t roll out too thinly. Roll the paper around the cardboard core and secure with paper clips. Leave to set hard in the fridge until ready to decorate the cake. To garnish: unroll the paper and pull the top sheet straight while unrolling, this will splinter the chocolate on the bottom sheet into slightly rounded shards.
DIRECTIONS – CAKE:
Adjust oven shelf to middle position. Preheat oven to 180°C. Butter 2 x 20cm cake tins generously and line bases with baking paper. Pour the tin of cherries into a sieve and drain well over a bowl. Beat eggs and oil for 1 minute on high speed until well blended. Add cherry juice and black coffee and beat for 1 minute on high speed. Add Chocolate Cake Mix and fold in by hand with a spatula until combined. Scrape mixture into prepared pans. Weigh each pan to make sure you have the same amount of mixture in each. Level the mixture. Bake for 40 minutes. Cake is done when a thin-bladed knife inserted in the centre comes out clean or cake pulls away slightly from the sides of the pan. Cool cakes in the pan for 10 minutes. Turn out on a wire rack. Divide each cake into two layers through the middle (check video for technique).
DIRECTIONS – FILLING:
Half whip the cream and then sprinkle the dry Cheesecake Mix over. Whip cream until just firm. Spread ¼ of the filling over one cake. Place one third of the drained cherries evenly on the cream. Position next cake on top and add cream and cherries, as above, until all four layers have been used. Unroll the paper and pull the top sheet straight while unrolling, this will splinter the chocolate on the bottom sheet into slightly rounded shards. Garnish top with remaining cream, stemmed cherries and chocolate shards. Leave in the fridge to firm for 1 hour before serving. Serve on a cake stand.

The first day of fasting for the holy month of Ramadan, which is determined by the sighting of the new moon, is likely to be starting next week on Tuesday, April 13th. It is a time of self-examination and increased religious devotion. Many people broaden their compassion for the hungry and less fortunate when they fast. Therefore, Ramadan is also a time for many to donate to charity by participating in food drives (see below) and other voluntary activities.

Freedom Day is a public holiday in South Africa celebrated on April 27th. It is an annual celebration of South Africa’s first non-racial democratic elections of 1994. It is significant because it marks the end of over three hundred years of colonialism, segregation and white minority rule and the establishment of a new democratic government led by Nelson Mandela and a new state subject to a new constitution.
Freedom Day is a special day for all South Africans to reflect on the painful struggles we’ve overcome as a country, as well as to honour the students, teachers, political leaders and everyday people who lost their lives in the fight for a democratic South Africa.
Freedom Day affords South Africans the opportunity to make a pledge towards fighting against the legacy of racism and economic inequality as well as renewing their loyalty to their country and their commitment to its future. Celebrating Freedom Day in South Africa is all about commemorating the country’s history and the start of democracy.

HAPPY ST. PATRICK’S DAY – SOUTH AFRICAN STYLE!
St. Patrick’s Day is a global celebration of what it means to be Irish; the spirit, the determination, the creativity and the indefinable qualities that make the Irish people who they are.
Once a year, in cities like Cape Town and Johannesburg, the streets are filled with South Africans and tourists wearing strange green clothing and drinking green beer – a sign that St Patrick’s Day has arrived.
Here in Canada, we celebrate the holiday by day drinking and partaking in the celebration of Irish culture with parades, special foods, music, dancing, and a whole lot of green.
In the spirit of the holiday, here is a list of some GREEN Eat Sum More delicacies that you and your family & friends can enjoy on March 17th
MARCH 21st IS HUMAN RIGHTS DAY IN SOUTH AFRICA
Human Rights Day is a national holiday that is commemorated annually on March 21st in order to remind South Africans about the sacrifices that accompanied the struggle for the attainment of democracy in beloved South Africa.
Human Rights Day is historically linked with March 21st 1960, and the events that took place in Sharpeville. On that day, 69 people died and 180 were wounded when police fired on a peaceful crowd that had gathered in protest against the Pass laws. The South African democratic government declared March 21st to be Human Rights Day – to commemorate and honour those who fought for the liberation and the rights we enjoy today.
To celebrate this historic day, the traditional food that is served is called Bunny Chow, which is a delicious South African dish consisting of a hollowed-out loaf of white bread filled with meat, Durban curry, beans and mielie (see Recipe of the Month below).
RECIPE OF THE MONTH – DURBAN CURRY BUNNY CHOW
INGREDIENTS
PREPARATION
- Heat the oil and fry the cinnamon and onions until soft and lightly golden brown.
- Add the curry powder, turmeric, ginger, garlic and tomatoes. Cook over a medium heat, stirring occasionally, until the mix resembles a puree.
- Add the cubed meat, beans and mielie and cook for about 10 minutes. Add potatoes and about 1/4 cup of water. Simmer over low heat until the meat and potatoes are tender (roughly 30 minutes).
- Add Indian Braai & Grill spices and salt if necessary. Simmer for a further 10 minutes on a low heat.
- Cut bread loaves in half and hollow out to form a bowl.
Spoon the cooked hot curry mix into the half loaf and serve, garnished with coriander leaves.

EAT SUM MORE PAYS HOMAGE TO BLACK HISTORY MONTH
Black History Month is not just a North American holiday – South Africa also celebrates it in the month of February. Whereas in North America, we acknowledge Abraham Lincoln’s birthday, in South Africa it is held in February due to the release of Nelson Mandela after 27 years in prison (on February 11, 1990).
And even though it has only been a relatively short time since Nelson Mandela was freed, the younger generations living in Cape Town, Johannesburg & surrounding cities believe they are part of a “clean slate” in South Africa and will continue to work towards equal civil rights and freedoms for all people.
Black History Month is an opportunity for us to recognize and pay our homage to the past and present contributions of African Americans in areas such as education, medicine, art, culture, public service, economic development, politics and human rights.

Winter has hit Toronto full force – and temperatures this week hit a low of -25! Here are some cold weather tips & tricks for you to try:
- Always wear a hat made for cold weather when you step outside.
- Turn on the ceiling fan, which pushes warm air downwards.
- Switch between hot and cold in the shower to improve circulation.
- Block drafts under doorways with a pool noodle.
- Two words: programmable thermostat.
- To trick a locked thermostat that you don’t have access to, place some ice near it and it will perceive the room being colder than it actually is.
- Dress your windows up in warmer clothes. Replace thin curtains with heavier wool or fleece drapes.
- Go ahead, bake all day – using your oven heats up the whole house.
- Stuff your coat pockets (and gloves) with those ingenious little air-activated hand warmers.

INGREDIENTS:
3 parts brewed coffee (Koffiehuis Medium Roast Or Original Frisco)
1 part Amarula (1-2 shots)
Brown sugar, to taste
Whipped cream, to taste
DIRECTIONS:
Brew the coffee to desired heat
Mix the Amarula in
Sweeten with brown sugar
Add a dollop of whipped cream
Garnish with cinnamon, if desired

Valentine’s Day is right around the corner, and whether you’re in a new relationship or have been dating for a while, or just want to tell someone that you think they are special, chances are you are looking for that certain wonderful something to give them this Sunday, the 14th of February.
